Because morels cannot be farmed at scale, and nobody has managed to change that. Every mushroom in the box was found by a person walking a forest floor at 2,400 metres during a six-week window in spring. Sun-drying then removes about nine-tenths of the weight — so 50g dried is roughly 500g fresh, and a good forager may come back with a handful after a whole day of walking.
Soak in warm water or milk for 30–45 minutes, then rinse gently to remove any trapped forest debris. Do not throw away the soaking liquid — strain it through a fine cloth and use it as a broth. It is the most concentrated thing in your kitchen, and it belongs in a risotto, a biryani or a gravy.

Twelve months from the date of packing, which is printed on every box along with the batch number. Store it in a cool, dry place. Once opened, keep it in an airtight container or refrigerate it, and it will hold its aroma to the end.

Really wild. Morchella esculenta resists commercial cultivation almost entirely — which is precisely why it is expensive and precisely why we can say it without hedging. Each batch is traceable to a district and a season. Ask us for the batch and we will tell you where it walked in from.
